Shrimp Free Chipotle Shrimp


What happens when you take the shrimp out of chipotle shrimp? You get this tasty vegetarian dinner, that's what.  Next week we're going to try taking the chipotle out too, just to see what happens.   So this is Chipotle Shrimp from Mexican Everyday made with the Tofu instructions.

Beware, here be zucchini.






So, we've almost stopped looking when it comes to making salsa.  We just throw whatever we happen to have on a tray and put it under the broiler.  It's finally become one of those things that encompasses the original idea of Friday night Mexican: easy.  The recipe also needs a can of roasted tomatoes but that's still a unicorn item here in Toronto.


Here are the reagents for this dinner.  Looks like some chayote, chicken vegetable stock, zucchini, extra firm tofu, garlic, roasted tomatoes, some oil, and the chipotles en adobo.


Aside from its perfect geometric properties, tofu really takes the place of a lot of meat if you're preparing it in a sauce of some sort.  If you're just in the market for a cut of meat, I haven't been able to find tofu breasts or drum sticks, but I'll keep looking.  The tofu gets cooked up and set aside before everything else hits the heat.


The tomatoes and chipotles get whizzed up and mixed with roasted garlic and the broth.  The chayote probably could have been sliced a hair thinner, but the zucchini was good to go.  The tofu gets tossed back in at the end and you have dinner ready.  Aside from all of the other stuff you have to do.


Once again, a stack of warm corn tortillas, and a generous dollop of guacamole complete the dinner.  The multi-coloured tortilla chips are Que Pasa brand which we quite enjoy.


And sometimes you just can't decide which picture you like best, so here is another one.  That's Monterrey Jack on top, even though the recipe doesn't call for it. Rebels! 


And when you take it all out of the fridge on Sunday for Sunday night Mexican, it looks just as good.
